The 2021 Cabernet Sauvignon has an intense blue-purple core that releases aromas of blueberry, dried currant, mint, milk chocolate, black pepper, dried herbs, and cream cheese. The palate oozes with delicious currant, cooking spices, marzipan, and sandalwood. You can pair this wine with harvest delights such as duck sausage, pulled pork with hatch chilies, brown butter sage pork chops, and cranberry-onion brisket. This smooth and concentrated Cabernet Sauvignon has a bouquet of plums, black currants, and warm cedar. The black currants continue on the palate with flavors of olallieberry and stewed cranberries leading to a smooth finish with supple tannin and a lingering of baking spices. Serve with braised short rib with pancetta.
