PALATE: Cherry carries through with a touch of tobacco and vanilla
FINISH: A bright and medium body Cabernet with flavors of stewed cranberries and allspice.
Winemaking Notes
Cabernet Sauvignon comprises the largest planted acreage at Cass, thus we are privileged with the ability to select fruit from a wide variety of sites, soils and clones across the vineyard. With roughly 70 acres spread over 5 distinct blocks, we picked from late September to the end of October. The longer picking duration creates balance for the palate, with earlier picks lending crisp acids and the later providing riper nuanced flavors. Structure and soft tannins are established with a an intentional oak program that still allows for the expressive quality of the fruit to remain the focus. Once blended, these traits lead to remarkably balanced wines.
