92% Cabernet Sauvignon, 4% Petite Sirah, 3% Petit Verdot 1% Malbec
Tasting Notes
NOSE: Brambleberry and black cherry liqueur with charcoal and slate, vanilla bean, clove, and warm leather. Subtle violet and dried sage.
PALATE: Saturated dark fruit with exceptional concentration. Malbec adding a rounded, velvety contour with layers of molasses, dark caramel, and exotic spice.
FINISH: Expansive and persistent with lingering notes of mineral, spice, and deep fruit. Poised for long-term cellaring.
Winemaking Notes
Barrel select Cabernet. Cabernet Sauvignon comprises the largest planted acreage at Cass, thus we have the ability to choose fruit from a variety of sites, soils, and clones across the vineyard. Picked in early September, the grapes were fermented into 5-ton open top fermenters and pumped over multiple times per day to achieve maximum extraction, which was necessary to match the ripe flavors of the vintage.
