NOSE: Ripe raspberry, strawberry compote, red plum and candied cherry. Baking spice, dried lavender and dusty earth. PALATE: Plush, open entry. Mixed red fruits. Soft tannins with a rounded, juicy core and a subtle note of clove spiced pineapple.
FINISH: Supple and expansive with lingering red fruit and spice. Fine tannin that gently frames the wine.
Winemaking Notes
Acclaimed as the reason for our winemaker, Sterling Kragten, finding a home at CASS Winery. This light bodied, pure varietal is elegant and surprising when served slightly chilled. Picked throughout September and October, the grapes were fermented into 5-ton open top fermenters and pumped over multiple times per day to achieve maximum extraction. Aged for 14 months in 8% New French and Russian oak.
Pair this wine with chorizo and date-stuffed pork tenderloin.
