Tasting Notes
NOSE: Quince, persimmon, apricot and dried wildflowers with Meyer lemon peel.
PALATE: Satin-textured entry with a defined core. Baked apple and preserved lemon with a subtle savory note reminiscent of chamomile tea and olive oil. Firm, integrated acidity giving structure and drive .

Winemaking Notes
To preserve the intense fruit flavors and aromatics of the variety, this Roussanne was fermented entirely in stainless steel. Hand- picked in the early morning hours of beginning through mid September, the cold grapes were pressed immediately after harvest. After settling, the juice underwent a 4-6 week cold fermentation.
Pairs perfectly with lobster ravioli in a a tomato cream sauce.
