Tasting Notes
NOSE: Golden apple, ripe pear, and white peach with notes of acacia, chamomile, and light citrus blossom. Almond, beeswax, and a touch of honey with subtle minerality
PALATE: Bosc pear, melon, and apricot. A rounded mid-palate with layered texture and fresh acidity carrying notes of ginger, citrus oil, and raw almond
FINISH: Lingering orchard fruit and floral tones with light hazelnut and a mineral edge. Clean, mouth-coating but not heavy.
Winemaking Notes
To preserve the intense fruit flavors and aromatics of the variety, this Marsanne was fermented entirely in stainless steel. Hand- picked in the early morning hours of beginning through mid September, the cold grapes were pressed immediately after harvest. After settling, the juice underwent a 4-6 week cold fermentation.
Pairs well with seared scallops in a brown butter and shallot sauce.
