Winemaking Notes
Purposeful picks of Mourvedre and Grenache were made at night and pressed in a matter of hours to make this delicate but flavorful rose. The juice and lees were then kept at freezing temperatures for a period of weeks while dry ice was added everyday to mix the lees and protect the juice, a process called "stabulation." This method, in addition to a long and cold fermentation, helps create this intensely aromatic rose wine.
