Tasting Notes
Savory and sensual, the bouquet resounds a rich melody of crème de cassis, mulled cherry, red currant and sweet tobacco leaf. A focused finesse reminiscent of dark fruit and spice, drape the palate, while deep notes of chocolate reduction, pomegranate molasses, black olive tapenade and aged saddle leather immerse the senses. Integrated tannin and soft acidity surrender to a velvety texture completing the ruminating finish.
Winemaker Notes
Cabernet Sauvignon comprises the largest planted acreage at Cass, thus we have the ability to choose fruit from a variety of sites, soils, and clones across the vineyard. Picked in early September, the grapes were fermented into 5-ton open top fermenters and pumped over multiple times per day to achieve maximum extraction, which was necessary to match the ripe flavors of the vintage. Aged for 24 months in French oak.
