Tasting Notes
83% Cabernet Sauvignon, 8% Petite Sirah, 7% Malbec, 2% Merlot. Subtle yet sultry notes of black currant bud, crème de cassis, dried eucalyptus and spice cabinet lead into a pillowy-soft palate that is layered with silky tannin and focused acidity. Accents of cherry crumble, baked boysenberry and pomegranate preserves are all seamlingly infused with seductive sweet oak and campfire smoke. With time this wine will blossom.
Winemaking
Cabernet Sauvignon comprises the largest planted acreage at Cass, thus we have the ability to choose fruit from a variety of sites, soils, and clones across the vineyard. Picked in early September, the grapes were fermented into 5-ton open top fermenters and pumped over multiple times per day to achieve maximum extraction, which was necessary to match the ripe flavors of the vintage. Aged for 22 months in French oak.
